Ok, so we know that I have shared many recipes before and that I’m not a horrible cook, but I have a confession to make. I have always struggled with pancakes, one of the simplest recipes around and I could never get it right…until now.
This was a recipe I saw from Jamie Oliver, easy to remember and they turn out perfect every time.
What makes it so easy is that everything is in ‘ones’…
1 cup self raising flour
1 cup milk
1 egg
1 teaspoon (splash) vanilla essence
Mix it all together and then cook. How easy is that? And it doesn’t even have to be a proper measuring cup as long as you use the same cup for both the flour and milk.

I love easy recipes like that. Here’s one for you for cobbler.
Melt 1STICK BUTTER in iron skillet. Mix 1 CUP FLOUR, 1 CUP SUGAR, 1 CUP MILK in a bowl. Pour mixture into melted butter (don’t stir). Add 1 CAN PIE FILLING OF ANY KIND. Don’t stir it either but distribute it kind of evenly. Bake at 350 F. until crusty stuff is done.
My family calls it cuppa, cuppa, cuppa.
